Ingredients
- 1 pound ground chorizo sausage
- 1 bag diced frozen potatoes(thawed)
- 8 oz bag of shredded cheddar cheese
- 10 ct bag tortillas
- 6 large eggs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 15 oz can black beans(drained)
- 4.5 oz can diced green chiles(drained)
- 1 Tbsp olive oil

Equipment
- 9×13 inch baking dish
- Cookie sheet
- Parchment paper(optional)

Step-by-Step Instructions
- Preheat the oven to 375°F (190°C)
- Lay diced potatoes on cookie sheet, toss with oil, salt & pepper – bake for 25 minutes
- Brown chorizo in a large skillet, breaking into small pieces
- Drain excess fat from sausage and move sausage to the baking dish
- When potatoes are cooked, add to baking dish with chorizo
- Drain black beans and chiles in a strainer
- Whisk eggs in a separate bowl, season with salt and pepper, add drained black beans and chiles
- Pour egg mixture over chorizo and potatoes in your baking dish
- Place baking dish into the oven for 35-40 minutes
- Ensure that your casserole has reached a safe temperature and is no longer wiggling in the center when you shake the baking dish
- Top with cheese and serve
- If you plan to meal prep this casserole as burritos, then follow the next steps
- Lay down pieces of aluminum foil, place tortilla on top of aluminum foil, sprinkle cheese on tortilla, place a slice of egg casserole on top, wrap your burrito up and then finish by wrapping your burrito with the aluminum foil
- Place finished burritos in the freezer
- Remove aluminum foil BEFORE microwaving frozen burritos when you’re ready to eat them
- Reheat burritos by placing them in the microwave for between 90 seconds-2 minutes
