Budget Friendly, Meal Prep Friendly And Absolutely Delicious

Chipotle burrito bowls are bang for your buck at it’s finest. They’re macro-friendly and super satisfying. Annnnd, they can be even cheaper when made at home. Here’s my copycat recipe and frugal fireman copycat recipe. This recipe utilizes ground beef instead of steak to keep costs down. It’s also a great option for meal-prep too!

Grocery Shopping List

Here’s everything you need to make your burrito bowls. If you want to meal prep this, just double or triple the recipe.

  • 2 Lbs Ground Beef
  • 1 LB Bag White Rice
  • 15.5 oz Can Black Beans
  • 7 oz Can Adobo Sauce
  • 1 Bunch Fresh Cilantro
  • 1 Bag Shredded Mexican Cheese
  • Dried Oregano
  • Cumin Powder
  • Chili Powder
  • Garlic Powder
  • 1 Jar Herdez Salsa Verde
  • Sour Cream(If You Nasty)
  • Guacamole(Pre-made)

Life Hack To Save Money: Just buy the store brand shit. A lot of the products are canned in the same factories with different labels. Do you really think there’s that much difference between Kroger brand canned black beans and black beans made at Bush’s? Buy generic and save money.

Ingredients:

  • 2 lbs Ground Beef
  • 1c White Rice
  • 15.5 oz Can Black Beans

Beef Seasoning

  • 2 Tbsp Chipotle Sauce
  • 2Tbsp Water
  • 1.5 Tsp Salt
  • 1.5 Tsp Dried Oregano
  • 1 Tsp Cumin Powder
  • 2 Tbsp Chili Powder
  • 1 Tsp Garlic Powder

Toppings:

  • Salsa Verde
  • Chopped Fresh Cilantro
  • Shredded Mexican Cheese
  • Sour Cream(If You Nasty)
  • Guacamole(Pre-made)

Recipe: How To Make It

  1. Cook ground beef in a skillet and then drain the fat off
  2. Mix your beef seasoning ingredients together in a small bowl.
  3. When the ground beef is fully cooked and the fat has been drained off, you can add your beef seasoning to the pan and stir, add an additional 2/3c of water and cook until desired consistency
  4. Rinse your dry rice in cold water and drain it three times(this rinses off excess starch which can make your rice gummy)
  5. Add 2 cups of water and 1 cup of rice and a pinch of salt to a small pot, and bring it to a boil
  6. Once boiling, reduce the heat and cover with a lid. Allow the rice to cook until all the water has evaporated (Between 12-20 minutes, depending on the rice).
  7. After the water evaporates – remove the pan from the heat and let the rice rest with the cover on
  8. Add black beans to a microwave safe bowl and heat them up
  9. Chop Fresh Cilantro
  10. Now it’s time to make your bowl, do it just like Chiptole does. Throw down a bed of rice, add your beans and protein, salsa comes next and then finish with your cheese, sour cream and guac

This is an easy and budget friendly way to have “Chiptole” at home. One more way to save money by doing this is to buy rice in bulk. It’s something I don’t mind having on hand, because it’s so versatile.

Just remember you can customize this bowl however you like, you can add steak, chicken or make it veggie friendly. If you don’t like salsa verde, use traditional red salsa, it’s your world – I’m just living in it.

Meal Prep Tip: Leave the toppings on the side. This will allow you to reheat your burrito bowl and then add your toppings after. Unless warm guacamole and sour cream is your thing, then by all means.
